Tarte Au Citron:

Fresh lemon curd in a sablée crust topped with torched vanilla meringue.    

Flan Parisien with Jam:

Vanilla custard baked into a sablée crust with a layer of mixed berry jam. Flan is a classic custard dessert with variations made worldwide. The French version (or “Parisien”) is baked inside a pastry shell.    

 

Yellow Layer Cake with Chocolate Frosting:

These are small vanilla cakes with chocolate frosting; basically it’s like a little classic birthday cake. One size only, serves about 4 ppl.  

 

Chocolate Cheesecake*:

Cheesecake made with chocolate and cocoa powder, on a linzer cookie crust. Small size only. Note: because the crust is made with linzer dough it does contain nuts.  

 

Galette des Rois (Kings Cake) -

Starting Saturday 1/4: a flaky puff pastry tart filled with toasted almond frangipane. Traditional for the holiday of Epiphany in France, each Galette contains a porcelain figurine called a fève. If you get the slice with the fève, you get the crown and you are the "king."  Fève is the French word for "fava." Early galettes would have a fava bean inside, and that is where the name comes from. 

THE PORCELAIN FEVE IS BAKED INTO THE CAKE.

PLEASE EAT WITH EXTREME CAUTION UNTIL FINDING IT.

Pizza Dough

Available Daily

Operating Instructions: 
 

Refrigerate dough until one hour before use. 
Preheat oven to 475*-500* 

 

Place dough on lightly floured surface and begin to press flat with your fingertips. Let dough rest for five minutes. Repeat pressing and resting until desired thickness and size is achieved, typically 1/4" thick. Dough will become softer and easier to stretch as it warms to room temperature, so be patient! Apply toppings. 

 

Bake on a sheet pan or baking stone until crust is toasty and toppings are bubbly. 

 

For Pizza on the Grill: 

 

Once dough has reached 1/4" thickness, transfer to a floured pizza paddle or cutting board. Brush dough with olive oil and place oiled surface directly on preheated grill. Once dough has set, about 2 minutes, turn the crust over. Add desired toppings and close grill cover. Cook pizza for 5 minutes or until the cheese begins to bubble.
